Sweet Potato Apple Salad

Want a fun, warm salad to add to your dinners this winter? This salad is so comforting, flavorful, and nutritious; I can’t wait for you all to try!

Throw it on the side of any dish, or throw in some chicken and make it a full meal! Whatever you do, it is sure to make you feel warm, cozy, and nourished.


This recipe takes:

  • 20 minutes


Ingredients

  • 2 cups spinach

  • 1 sweet potato

  • 1 apple

  • 1/8 cup feta cheese

  • 1/4 cup walnuts (not pictured but added later)

  • My 2-minute salad dressing (click to access recipe)

  • Salt, pepper, and paprika to taste

Let’s get cookin’!

  1. Chop and fry potatoes! Grab your sweet potato and chop into small, bite sized pieces for your salad. No need to peel it unless you prefer that! Just make sure to wash it well (there is tons of fiber in the skin). In a pan, drizzle a bit of oil and add your sweet potatoes. Add a bit of salt, pepper, and paprika and give it a mix. Let cook for about 10 minutes on medium, mixing every 2-3 minutes until soft.

  2. Chop apples and walnuts! While your sweet potato is cooking, chop up your apple and walnuts into small pieces. Again, no need to peel the apple.

  3. Make your dressing! Throw together my 2-minute dressing with 2 tbsp olive oil, red wine vinegar, mayonnaise, oregano, salt, and pepper. You can also use your favorite oil-based salad dressing.

  4. Throw it all together! In a bowl, add your spinach, sweet potato, apple, feta, walnuts, and dressing. Mix together!

  5. Enjoy! A fun, nourishing salad in just a few minutes. Serve and enjoy!
