Simple Egg Fried Rice

Who knew that Egg Fried Rice could be so simple and tasty?! If you are looking for a quick side or a filling mid-day snack, try out this recipe! You can also add any kind of meat like chicken, turkey, ground meat, or even chickpeas for more protein if desired.

This recipe is one of the first dishes that my fiancé made for me when we first started dating, so it hold a sweet spot in my heart. I hope it can bring you some joy, too!


This recipe takes:

  • 15-30 minutes (depending on rice used)


Ingredients

  • 1 cup day-old cooked rice (or use 1/4 cup dry rice if you need to cook it now!)

  • 1/4 cup frozen peas, corn, and carrots

  • 1 egg

  • 1/2 tbsp soy sauce

  • Salt and pepper

Let’s get cookin’!

  1. Boil/warm up rice! This recipe tastes the best if you use rice from the nigh before. However, you can also cook your rice on the spot if needed! If using day-old rice, add a small amount of oil to a pan and add your rice. Warm on low while you work on the next step. If making new rice, cook according to the package’s instructions (will vary depending on brand!)

  2. Cook your veg! While your rice is boiling/warming up, add water to a small pot and bring to a boil. Then, add your frozen vegetables and boil for about 10 minutes or until they are fully cooked and soft.

  3. Combine! If you boiled your rice, you just have one extra step; transfer your rice to a pan with a drizzle of oil. Otherwise, drain your vegetables and add to the pan. Then, add your soy sauce and mix until combined. Then, add an egg and mix into the dish until scrambled. Add salt and pepper to taste.

  4. Enjoy! Once you have everything mixed together and seasoned, plate up and enjoy! Great work :)
