Cheesy Avocado Toast

Avocado toast may be a trendy breakfast, but it is actually very nourishing and a great way to start your morning! You can get carbs, healthy fats, fiber, protein, and loads of vitamins and minerals all in a simple meal!

BUT, someones your normal avocado toast can get a bit boring. These cheesy eggs are just the thing you need to switch up your breakfast!


This recipe takes:

  • 15-20 minutes


Ingredients

  • 2 slices bread

  • 2 eggs

  • 1/4 cup shredded cheese (your choice!)

  • 1/2 avocado

  • Pinch of oregano

  • 1/4 tsp all-purpose seasoning ( I use Trader Joe’s 21 Salute Seasoning!)

  • Salt and pepper to taste

Let’s get cookin’!

  1. Toast! First, throw your choice of bread in the toaster. And no, 2 slices of toast is not too much for breakfast.

  2. Start your cheesy eggs! On a pan, add a small drizzle of oil. If you are using a non-stick pan, you may skip the oil. Then, split your cheese in half and create a circle the size of a sunny-side up egg. You egg will sit on top of the cheese and cover it. When the cheese starts to melt, crack one egg on top of each portion of cheese. Your cheese will continue to melt as your eggs cook! Add salt and pepper to taste, along with the all-purpose seasoning.

  3. The water trick. The trick to getting the perfect sunny-side up eggs are water. Add about 1/2 tbsp of water to the pan (to the side of the eggs) and cover the pan with a lid. This will create steam and help the eggs cook. Continue to cook until your eggs reach your preferred hardness (anywhere from 3-10 minutes depending on how soft or hard you like them!)

  4. Avocado! While your eggs are cooking, scoop half of an avocado into a bowl add a pinch each of salt, pepper, and oregano. Trust me, something about avocado and oregano together just works! Use a fork to smash the avocado and mix in the seasonings to create a spread.

  5. Assemble! Once your eggs are ready, spread the avocado onto each slice of toast and add a cheesy egg on top. Add any other toppings you like!
