Chicken Pot Pie Soup

This Chicken Pot Pie Soup is great for those cold winter days. It takes very little effort to make and most of the time required is waiting time! Give this recipe a try on a slow, Sunday afternoon and you are sure to love it.


This recipe takes:

Ingredients

  • 2 chicken breasts, raw

  • 2 cups potatoes, diced

  • 1.5 cups frozen peas, carrots, and corn

  • 1/4 cup heavy cream

  • 1 tbsp pepper

  • 1 tbsp salt

  • 1 tsp smoked paprika

  • 2 tsp oregano

Let’s get cookin’!

  1. Boil chicken! Fill a medium pot with about 6 cups of water and add chicken breast into cold water. Bring the water to a boil and let the chicken boil for about 15 minutes. It will boil longer in the next step, so do not worry about the chicken being fully cooked! After 15 minutes, remove chicken breasts and shred or chop into bite-sized pieces. Add back into the pot before moving on.

  2. Dice and boil potatoes! Dice up enough potatoes to amount to bout 2 cups of diced potatoes. This should be about 5-6 small potatoes. Create small, bite sized pieces. Drop the small pieces of chopped potatoes into the pot and allow to cook for about 20 minutes, or until fork tender.

  3. Add vegetables! Add your frozen vegetables to be pot and allow to thaw for about 5 minutes.

  4. Add heavy cream and seasonings. Once all portions of the soup are fully cooked, add your heavy cream and seasonings. Allow to sit for about 2-3 minutes and taste. Adjust with seasonings as needed!
