30 Minute Chicken Chili

Quick and easy dinners are always my go-to, especially on busy weekday nights. There is no shame in whipping together a simple dinner that will get everyone fed. This chili is not only fast and easy to make, but also tastes delicious and is perfect for meal prepping! It is so warm and cozy, and will bring you the comfort you need after a long day.

This 30-minute chicken chili was inspired by a recipe my future mother-in-law made, and I had to try it out for myself. You can also add your own variation of vegetables and use different meat as you prefer! I hope you all enjoy it!


This recipe takes:

  • 30 minutes, of course!


Ingredients

  • 1 pound ground chicken

  • 2 tbsp olive oil

  • 2 cups chicken broth

  • 1 can diced tomatoes

  • 1 can corn

  • 1 can black beans

  • 1 zucchini

  • 3 tbsp taco seasoning

  • 1 tsp oregano

Optional toppings:

  • Sour cream

  • Cheese

  • Avocado

  • Cilantro

  • Tortilla chips


This recipe feeds:

  • 3-4 people


Let’s get cookin’!

  1. Cook your chicken! Drizzle your oil onto a deep pan or pot. Drop in your ground chicken and add all but 1/2 the taco seasoning when it is almost cooked all the way through. Allow chicken to cook fully until dark brown.

  2. Add chicken broth and canned vegetables! When your chicken is cooked, add your chicken broth to the pot. Bring the broth to a boil and add your drained corn and beans. Add tomatoes without draining. Allow this to simmer for 3 minutes!

  3. Chop and add zucchini! While that simmers, chop up your zucchini into small, bite-sized pieces. Add to the pot and cover to allow them to soften for about 5-7 minutes.

  4. Finish up and enjoy! Finish by adding the rest of the taco seasoning and taste. Feel free to add more seasoning if needed! You can also add 1 tbsp of flour if it is too thin. Now you are ready to dish up and add any toppings as you please. Enjoy!
