One-Pan Garlic Shrimp Orzo

I am always looking for quick, one-pan dinners that are also interesting and tasty. This Garlic Shrimp Orzo is the perfect week-night dinner that will surely have you feeling satisfied!

With just a few ingredients and a short bit of time, you will have a delicious dinner on the table. Enjoy!

Ingredients

  • 1 lb large shrimp

  • 1 lb dry orzo

  • 1 qt chicken broth

  • 2 tbsp heavy cream

  • 2 cups spinach

  • 1/2 cup sun-dried tomatoes

  • 1 tbsp butter

  • 3 garlic cloves (or 1 tbsp minced garlic)

  • 1/2 tbsp paprika

  • 1/2 tbsp oregano

  • Salt and pepper to taste

Let’s get cookin’!

  1. Sauté shrimp. Add butter to a hot, deep pan, big enough to fit a quart of broth, and let melt butter. Add your shrimp to the pan (make sure to thaw them first!) and cook for about 5 minutes, mixing every 1-2 minutes. Then, add garlic and let cook for another 3 minutes. Add salt, pepper, oregano, and paprika.

  2. Cook orzo. In the same pan, add all of the chicken broth and bring to a boil. Then, add your orzo and lower heat slightly. Let cook until all of the broth is gone. Make sure to mix every couple of minutes and scrape the bottom to prevent it from sticking!

  3. Chop sun-dried tomatoes. If your sun-dried tomatoes are in bigger pieces, chop up into small pieces. Set to the side for later.

  4. Add the finishing touches! When all of the liquid has been cooked off and absorbed, add heavy cream and mix. Then, add spinach (whole) and mix into the dish. This will seem like a lot of spinach but it will cook down in just a couple minutes! Lastly, add sun-dried tomatoes, mix, and taste. You may want to add a bit more of your seasonings if it tastes bland; up to you!

  5. Enjoy! Once everything is mixed and well-seasoned, serve up and enjoy!
