Pepper and Onion Pasta Salad

This recipe takes:

Ingredients

  • 2 cups pasta, dry (pick the funnest shape you can find!)

  • 1 cup bell pepper, chopped (variety of colors)

  • 1/2 red onion

  • 2 tbsp olive oil

  • Juice from 1/4 lemon

  • Salt and pepper


This recipe feeds:

  • 5-7 people


Let’s get cookin’!

  1. Boil pasta. Bring about 4 cups of water to a boil and then add your pasta. Cook to the package’s instructions (likely about 12-15 minutes)!

  2. Chop veggies. While the noodles are cooking, let’s chop up the bell peppers and red onion! Chop them into small pieces and set aside.

  3. Cool pasta. Once the pasta is cooked, drain all of the water and add to a bowl. Place the pasta in the fridge to help it cool faster. Let it sit for about 10 minutes mixing about 2-3 times throughout.

  4. Mix together. Take your pasta out of the fridge and add the chopped vegetables, oil, lemon juice, and salt and pepper to taste. Mix together well.

  5. Enjoy! Feel free to add more seasonings or an oil-based salad dressing if you choose. Serve up and enjoy!
