Cheesy Zucchini Scrambled Eggs

Sometimes a classic scrambled egg really hits the spot in the morning, but there are also times where I want some more flavor… Elevate your scrambled egg game with just a few extra steps!

Zucchini adds the perfect texture and taste to bring scrambled eggs to the next level, and of course, cheese just makes everything better!

Ingredients

  • 2 eggs

  • 1/3 cup zucchini, chopped

  • 1 tsp milk

  • Mozzarella cheese measured with the heart!

  • 1/4 tsp paprika

  • Salt and pepper to taste

Let’s get cookin’!

  1. Zucchini! Add oil to a pan and place on low heat on a stove. While the pan is heating up, chop up your zucchini into small, bite-sized pieces and add to the pan. Add paprika, salt and pepper.

  2. Prep and add eggs. While the zucchini cooks and softens, crack your eggs into a small bowl. Add milk, salt, and pepper, then whisk until fully combined (milk will make the scrambled eggs fluffier!) Once the zucchini is fairly soft and stars to get a light brown sear, add the eggs.

  3. Add cheese and serve! As the eggs are cooking, add your cheese and continue to cook to your desired hardness. Add to a bowl and enjoy!
