“Leftovers” Chopped Salad

I’m sure you’ve had more than a handful of times where you make way too much chicken for dinner and now have no idea what to do with it. Or, you simply have no idea what to make for lunch with all of the ingredients in your fridge. One of my favorite things to do with leftovers is created a chopped salad with absolutely anything that I am in the mood for, and it always turns out amazing!

Now, I will literally make leftovers on purpose just so I can make this salad the next day. The KEY to this salad is to chop everything into tiny pieces; I promise, it tastes better that way. Customize this salad as much as you’d like, but this is how I make mine!


Time needed:

  • 10 minutes


Ingredients

  • 1/2 cup leftover meat/protein, diced (chicken, turkey, pork, beef, tofu, or even beans!)

  • 1 cup lettuce

  • 1 medium tomato

  • 1/4 onion (any color will work)

  • 1/4 cup shredded cheese

  • 1 tbsp of your favorite dressing

  • Tortilla chips (optional)

Let’s get cookin’!

  1. Dice your protein. Whatever you have leftover will most likely work! I usually use grilled chicken, leftover pork chops, or taco meat. Chop it into very small pieces.

  2. Chop up your veggies. Next, chop up all of your vegetables into super small pieces, including your lettuce. Don’t ask me why, but a salad that is chopped up SUPER small just tastes to much better.

  3. Add cheese and dressing. Choose your favorite shredded cheese and dressing, and add to the bowl!

  4. Mix and enjoy! Mix up your salad until everything is well combined, and enjoy! This may seem simple, but I am sure that it will leave you satisfied and will be delicious. Enjoy on it’s own or scoop up with some tortilla chips!
