Breakfast Tacos

Who said that you can’t have tacos for breakfast? I am always looking for new savory breakfast ideas, because I LOVE a good, hearty breakfast. This came to mind one day and they turned out delicious!

You can customize your tacos anyway you like; corn or flour tortilla, a variety of toppings, whatever speaks to you! These tacos are also super easy to make but FULL of flavor and nutrients! Read along to make your own, and I would love to hear the variations you all think of. Enjoy!


Time needed:

  • 15 minutes


Ingredients

  • 2 small tortillas (corn or flour will work)

  • 2 eggs

  • Olive oil

  • 1/2 avocado

  • 1 small tomato

  • Cheese of choice

  • Your seasonings of choice (salt, pepper, all purpose, etc)

  • Any other toppings!

Let’s get cookin’!

  1. Tortilla and eggs! First things first, we will want to get the stove started up and drizzle a little bit of olive oil onto a pan (just enough to cover the surface). Then, after letting the pan warm up for a minute, you will place your tortillas onto the pan. Immediately after, you will crack 1 egg onto each tortilla. You want to add the egg right after because the tortilla will cook quickly and you don’t want it to burn! You can then add your seasonings to the eggs and cover the pan with a lid.

  2. Get your toppings ready! This is where you can get creative! My favorite toppings for these Breakfast Tacos are avocado, tomato, goat cheese, and sometimes sometimes some hot sauce or hot honey. You could use any type of cheese, other vegetables, sauces, whatever speaks to you! This will be your time to prepare it while your eggs get to your preferred hardness.

  3. Top and enjoy! After your eggs are ready, slide them off your pan onto a plate and add your toppings! Enjoy your savory, hearty breakfast :)
